Banana, Choco, Almond Squares

Easter always brings lots of sugary treats that wreak havoc on your immune and digestive system, but it’s sometimes hard to resist the desire for something sweet when everyone you see seems to be eating a Cadbury cream egg…

I saw these squares last month on my favourite holistic nutritionist, Joy McCarthy’s,  website and I was immediately excited to try them out! They’re raw, refined sugar free, vegan, and stupid delicious.

The original recipe called for goji berries and coconut butter, both of which I emitted for chopped almonds and almond butter, due to my lack of goji berries and allergy to coconut (tragic… I know).

Whip these up this afternoon for a family easter party this weekend, and have a great sweet healthy alternative to the sugary rabbit shaped sludge taunting you.

Bottom Ingredients:

  •  1.5 cup walnuts
  • 1 ripe Banana
  • 15 medjool dates
Topping Ingredients:
  • 1 ripe Banana
  • 4 tbsp almond butter
  • 4 tbsp raw honey
  • 1/4 cup raw cacao
Instructions:
1. Combine bottom ingredients in a food processor and process until well blended. There we’re some chunks remaining, but as long as it’s predominantly smooth, you should be good.

2. Spread blended bottom ingredients in a glass pan. I put some plastic wrap in the bottom to make removing the bars from the pan once frozen so much easier! Spread out the mixture until evenly distributed

3. Combine topping ingredients in a food processor and process until well blended, should be smooth. Beware, this stuff is dangerously delicious. Try and contain yourself from eating it all at once!

4. Spread blended topping ingredients over bottom ingredients in pan.

5. Place in the freezer for a couple hours.

6. Remove from pan, cut into squares and serve! (Makes 18 or so 1 inch squares)

Cleanse Update: I’m still on the straight and narrow, thankfully, and feeling awesome! I’ve been realizing that this whole predominantly raw based “cleanse” hasn’t really been a cleanse at all, but rather more of just a diet upgrade, that I think I can maintain long term. Everyone should be doing at least 50 percent raw most days… you feel incredible (and don’t look so bad either).

These desserts are ‘cleanse’ friendly, and I paired one with a avocado piqo de guyo salad (recipe up asap!!!). Total good friday yummminess.

  1. looks awesome. i’ve never tried medjool dates before, but i keep seeing this ingredient in cleanse-friendly recipes, so i might have to try it soon! i know what you mean about how healthy, clean eating can be quite easy to maintain as a lifestyle. my 3-week clean-eating cleanse (about 50% raw most days) started as a new year’s resolution, but i’ve been able to keep up with it for four months now. so far, so good. :)

  2. one of my first 10 raw food snack attempts….love the flavor – but they seem really soft even right out of the freezer…did i do something wrong?

    • Hi liseb! thanks so much for using the recipe! they won’t be rock hard, but you have two options to firm them up, add a higher ratio of nuts in the base, and also freeze them much longer than advised! Let me know how it works out!
